DESCRIPTION
Paleo egg roll in a bowl. Packed with nutrients, protein, and flavor!
INGREDIENTS
– 1 tbsp sesame oil
– 1 lb ground pork
– 1 bag of coleslaw mix
– 4 garlic cloves, minced
– 1 tbsp fresh ginger, minced
– 1/3 cup coconut aminos
– 1 tbsp rice vinegar
– 1 tbsp chili garlic sauce
– Sea salt + pepper, to taste
– Fresh cilantro, chopped, for topping
– 5 green onions, chopped, for topping
– Cooked rice (optional, for serving)
INSTRUCTIONS
1. Heat a large skillet over medium heat and add the sesame oil.
2. Once hot, add the ground pork and cook until no longer pink, breaking it up with a spoon. Season with salt and pepper.
3. Add the minced garlic and ginger to the pork and cook for another 2-3 minutes until fragrant.
4. Stir in the coleslaw mix and cook for about 5 minutes, until the veggies are slightly softened. Stir frequently.
5. In a small bowl, mix together the coconut aminos, rice vinegar, chili garlic sauce, and sesame oil.
6. Pour the sauce over the pork and vegetable mixture, stirring well to coat everything evenly. Cook for another 2-3 minutes until the veggies are fully softened.
7. Remove from heat and transfer to a serving bowl.
8. Top with fresh cilantro and green onions.
9. Serve as is or over cooked rice if desired. Enjoy!
