Ingredients:
- 3 lb PrimeWaters Salmon Fillet
- Sea salt and black pepper
- 6 Tbsp ghee, melted
- 4 cloves garlic, minced
- 2 tsp fresh rosemary, minced
- 2 tsp fresh thyme leaves
- 1 Tbsp lemon juice
- 1 Tbsp parsley, minced (for garnish)
Instructions:
- Preheat your oven to 400°F and line a large baking sheet with extra-long foil to wrap the salmon. Spray the foil with avocado oil cooking spray.
- In a bowl, whisk together the ghee, garlic, rosemary, and thyme. Pat the salmon dry and sprinkle both sides with sea salt and black pepper.
- Pour the ghee mixture over the salmon to evenly coat, ensuring the skin underneath is also coated for crispiness. Sprinkle lemon juice over the top.
- Wrap the salmon with the foil, covering the top completely. Bake near the bottom of the preheated oven for about 18-20 minutes or until just cooked through (cook time may vary with thickness).
- Unwrap the salmon to expose the top and switch the oven to “broil”. Broil the unwrapped salmon for about 3-4 minutes, watching closely to prevent burning, until the top is browned to your preference.
- Remove from the oven, sprinkle with minced parsley, and serve immediately. Enjoy! Store leftovers in a sealed container in the refrigerator for up to 3-4 days.
Recipe Notes:
- Fish is cooked through when it reaches 145°F and flakes easily with a fork.
- You can also make this recipe with 4-6 smaller salmon fillets.
